During the fermentation

When added to unpasteurized milk, proteins are transformed into amino acids the lactose (milk sugar) and transform it into lactic acid and other compounds, giving kefir its characteristic tangy flavor and effervescence.

How to make Kafir

Place the kafir grains into a clear glass jar with raw milk, with a cloth to cover.

Leave on the counter top for 24hrs to ferment

Stir with a wooden spoon and then strain through a plastic sive.

Catch the liquid, place the grains back into the jar and repeat the process.

if you want to reduce the speed place it in the fridge and it will slow the fermenting process down. (this is great if you are going away for a while)

Drink the kafir throughout the day and keep in the fridge untill consumed
